Pokemon GO eggs are a fantastic way to get not only rare Pokemon, but loads of candy for other Pokemon as well. They can hatch all manner of Pokemon, drawing on random pools of possible Pokemon depending on the time of year and how long it takes to hatch them!

The Pokemon GO Eggs chart has changed massively with the current Halloween event. Right now, most of the Pokemon featured in eggs are seen as powerful counters to many of the raid Pokemon popping up throughout the event.
Things are always subject to change at a moment's notice, though, so we would never say to blow all your incubators on whatever eggs you have. If there are Pokemon in them that you need, it's best to try to get them sooner rather than later. You really don't know when they'll be swapped out for better (or worse) creatures.
Though the odds of getting some of better Pokemon from these eggs still appear worryingly low, if you're looking for the Pokemon included, trying to get them here is better than doing nothing. Eggs hatch passively as you walk, rather than you needing to specifically do anything, so it's a nice and easy way to bolster your Pokedex.
There are now regional drops included in your eggs, where you can get Pokemon depending on what area of the world you are from. This can be beneficial if you are someone who trades a lot, or travels a lot. However, the flip-side is that if you don't leave your country much, it could be tough or even impossible to get some of those high-ticket Pokemon locked to specific regions.
